Here goes my recipe ----
Ingredients:-
- Chillis --- 8
For the filling:-
- Boiled Potato - 2 (medium sized)
- Cottage Cheese (Paneer ) - 125 gms
- Onion - 1 ( medium sized)
- Coriander leaves - a few sprigs
- Fennel Seeds - 1 tsp
- Coriander Powder - 1 tsp
- Garam Masala - 1 tsp
- Cashewnuts, Raisins - a few
- Red Chilli Powder - to taste
- Salt - to taste
For the Batter :-
- Gram Flour (Besan) - 1 cup
- Corn Flour - 1/2 cup
- Salt - to taste
- Red Chilli Powder -to taste
- Turmeric Powder - a pinch
- water - as required
Oil - for frying
Method:-
Wash the milagai well and make a slit through the length of it. De-seed it to create space for the filling. Set aside.
In a bowl add all the ingredients for the batter and add required water to get a thick consistency.
Grated Potatoes n Paneer, Chopped Onions
In a kadai add little oil and allow fennel seeds to splutter.Add cashews and raisins and saute them, now add the finely chopped onions and saute till it turns a light shade of brown. Add the mashed/grated potatoes along with coriander powder ,salt, red chilli powder and stir for some time. Add finely chopped coriander leaves and take off flame .Add the grated paneer and the garam masala. Mix well. The filling is ready.
Fill the milagai with the stuffing.
Dip them in the batter
and drop them gently one by one in the hot n steaming oil.
Fry them till golden brown and serve hot with Sauce/Ketch up. I enjoyed my bajjis with a steaming cup of tea.
After all the milagais were finished, a little stuffing was left. I didn't want to carry it for the next day, so i made a small ball and dipped in the besan batter and deep fried them . Yummy Paneer Potato Bonda was ready!
