I have already posted a Mixed Vegetable Rice in one of my earlier blogs. This is a Version 2 of the same Dish.
The strained veggies from the Vegetable Stock were put to a good use here. They were ground to a fine paste and used along with the Vegetable Stock.
So here goes the recipe:-
Ingredients------
- Onions (2 or 3)
- Tomatoes ( 1-2)
- Few pods of Garlic
- Green Chillis (2-3)
- Beans
- Carrot
- Green Peas
- Cauliflower
- Potato
- Whole spices like Cardamoms, Cinnamon Sticks, Cloves
- Butter
- Salt
- Rice
- Finely Chopped Coriander Leaves
- vegetable Stock
Method:-
Now in a Pressure cooker add some butter and saute the roughly grounded whole spices.Add chopped garlic and slit green chillis and saute well. Now add the onions and stir fry till golden brown. Add chopped tomatoes and saute.
Now add the chopped vegetables and let it cook for some time. Add the ground paste along with salt and saute the whole mix.
Now add the rice and saute it for some time. Pour the required Vegetable Stock in place of water and pressure cook for 2 whistles.
The essence and flavour of the vegetable stock brings a very delightful taste to the rice.
Garnish with coriander leaves and fried onions( optional) and serve hot with accompaniments.
