Mixed Vegetable Rice



It was one of those days when i feel like eating something grand, but don't want to cook anything elaborate----, so i decided on making mixed vegetable rice on the lines of vegetable biryani but with less effort !!!
The dish was tasty and appealing and did not take much time to prepare. 

Ingredients:-
  • Vegetables (Carrot, Beans, Baby Corn,Cauliflower, Potato,Green Peas,  Capsicum, Onions)
  • Garlic Pods ( 6-7)
  • Curd (1/2 a cup)
  • Biryani Masala (50 grams---approx)
  • Basmati Rice ( 1 Big Cup)
  • Ghee/Butter
  • Cashewnuts
  • Coriander Leaves
  • Bread Crumbs
Procedure:-

Wash and cut all the vegetables (including onions) in to thin slices.
Cook the Basmati Rice and keep aside.






















Now mix  the curd with the biryani masala to a paste.


In a big wok add some ghee/butter and saute the finely chopped garlic. As you enjoy the aroma of the sauted garlic add onions and stir till golden brown. Now add the cut vegetables and allow it to cook for some time.

Add the masala paste to the vegetables and stir well. Let the mix simmer till the raw smell of the masala vanishes. Add little water if the mix is becoming too dry and sticky. Now add the cooked rice to it along with salt ( as per taste) and mix well.






Garnish the rice with fried onions/bread pieces/roasted cashewnuts. Top it with coriander leaves.

Enjoy the rice with cucumber salad, papads, Raita
