Fresh Green Mango Pickle (Pickly Heat)

Pickles are an integral part of any household. They are perfect accompaniments for many dishes and sizzles the whole eating experience.
Raw mangoes and few Gooseberries in the fridge called for my attention. They were given a zippy lip smacking and spicy twist. The best part of it was other than cutting them there were no strenuous preparation.


So here is how i put it together:


Mangai keeru/ Fresh Green Mango Pickle




Before I start on the ingredients, let me make it very clear that Fresh Mango Pickles doesn't have a long shelf life. Refrigerate and use them as soon as possible!


Ingredients:-
  • Raw Green Mango - Medium sized (1 or 2)
  • Red Chilli Powder (20-25 gms)
  • Salt (as per taste)
  • Sesame Oil (20 ml)
  • Mustard (10 gms)
  • Turmeric Powder (5 gms)
  • Asafoetida (5 gms)
Method:-
Chop the Mango to tiny thin strips with the skin on.


 Now add salt and red chilli powder as per taste. Mix them well.


To make it more intense let the salt and chilli powder be on the higher side.
In a kadai (skillet), add sesame oil and let it warm on medium flame. Add mustard and let it splutter then add turmeric powder and asafoetida. Stir well and take off flame. Add the seasoning to the chopped mangoes and mix them well.




Mangai Keeru/ Fresh Mango Pickle ready.


Note:-
Any cooking oil can be used for seasoning. But using Sesame oil gives the pickle a very authentic taste and flavor.
