After an extravagant weekend that ran riot with shameless indulgence and sinful tucking :p at many of my favourite eateries, I am back to cooking & eating healthy.In this endeavour, the oats & whole wheat dosas from Rajani's blog was a perfect start.
Hop in to Rajani's space for a lot of lovely recipes interspersed with her witty recounting of life in general ! The dosa/pancakes got a tremendous response from hubby & kids. I served them with onion-tomato-peanut chutney and the pairing was delightful. The breakfast was one healthy affair !

What's in it :-
- Oats - 1 cup (Dry roasted & powdered)
- Semolina/Rava - 1/4 cup (Dry roasted)
- Whole wheat flour/Atta - 1/2 cup
- Onion : 1 - finely chopped
- green Chillis - 2 - to taste- finely chopped
- Carrot - 1- small- finely grated
- Curry leaves - a few, chopped
- Pepper - 1 tsp - to taste
- Salt - to taste
- Water - as required for the batter
- Oil - as required
How:-
In a bowl, mix the powdered oats, semolina,whole wheat flour,salt & pepper. Add the chopped chiilis, onion,curry leaves & grated carrot. Now add water as required to form a pancake like batter. Let the batter rest for 10- 15 minutes.
Warm the non-stick pan/skillet and grease it a little. Pour a ladle of the batter on the pan and gently spread it across. Let it cook till the bottom is browned. Now flip it over and cook the opposite side till golden brown. You can add a few drops of oil/ghee for cooking the pancake if not using a non stick pan.
Serve hot with chutney/sauce/any choice accompaniments. Enjoy !!
