Eggless Nutty Banana Cake

When my daughter accidentally mixed a pack of Refined Flour with Atta (Wheat & Multi Grain Flour), i decided to use the flour mix in making a cake.  A little inspiration from a few recipes over the net and a cake was born with ripe bananas and a whole lot of Nuts.  Here's my take on this yummy cake:-



Ingredients--
  • Flour - 1 cup (approx 200gms --- a mix of wheat flour & refined flour)
  • Powdered Sugar - 1 1/4 cup ( i used white, you can substitute with brown or a mix of both)
  • Butter - 1/2 cup (melted)
  • Ripe Banans -4
  • Vanilla Essence - 1 tsp
  • Baking Powder - 1tsp
  • Baking soda - 1tsp
  • Nuts -  1/2 cup and some more (a mix of cashews,almonds,walnuts,raisins)
How:-

Preheat the oven to 165 C. Grease a baking tray and dust alittle with flour. Keep aside.
Roughly chop the nuts and dry roast them till they are golden brown

Sieve the flour along with baking powder & baking soda and set aside.


Finely powder the sugar and whisk it to the butter along with the vanilla essence.



Puree the bananas and add it to the butter/sugar mixture.




Add the flour little by little and whisk well.



Mix in the nuts and scrape the batter to the greased tray.



Let it bake till a fork comes out clean. It took almost 50 - 55 minutes.Remove and cool on a wire rack. Serve with frosting if you please !
