Quesadillas Indian Style

A Quesadilla is a Mexican style stuffed parathas which has a yummy cheesy filling  sandwiched between 2(two) Tortillas.

Giving it an Indian Twist, I made Phulkas (Indian Flat bread)  out of wheat dough and used them as tortillas. For the sauce it was roughly pulped blanched tomatoes, garlic and basil sauted in olive oil. The stuffing saw a mix of potatoes, sweet corn, coriander and few other spices with a liberal addition of cheese. The filled and ready phulkas /tortillas can then be put on a non stick frying pan or even baked for a few minutes to give a crispy outer side and of course moist and yummy inside.






Here's how:-


For the tortillas---

  • Wheat Flour - 1 cup
  • Water - as required
  • Oil - a little to bind
For the Sauce---
  • Tomatoes -2 (medium sized)
  • Garlic - a few pods (finely chopped)
  • Basil- 4-5 leaves (roughly cut)
  • Olive oil - 1 tsp
  • Salt - to taste
  • Pepper Powder - to taste
For the filling ---
  • Boiled Potato - 1 to 2
  • Boiled Sweet Corn Cobs  - 1/2 cup
  • Chilli Flakes - as required
  • Oregano - to taste
  • Garlic- 2 or 3 pods
  • Coriander leaves - a few sprigs (finely choopped)
  • Salt - to taste+
  • Grated Cheese - to taste (more the merrier)
How :-

First prepare the phulkas  and set aside. For this knead the wheat flour with required water and add little oil to bind them to a smooth dough.




Take a small ball of the dough, spread it across dusting with a little flour if sticky.



Keep the tava on a high flame and place the phulka to cook a little. 


Take the tawa off flame and put the phulka directly on the  high flame and allow it to puff from both sides as shown.



Remove it off flame and keep aside.



Now for the sauce.  The ingredients


Add the washed tomatoes to boiling water. Let it simmer for a minute or two. Take off flame and drain. Now remove the skin and chop roughly.




Warm the olive oil in a skillet and add garlic, tomatoes, basil and saute for a few minutes. Season it with salt and pepper powder to taste.



After it cools off roughly pulp it to get the base sauce.


Preparing the filling part is the most fun. Let your taste buds dictate the choice of ingredients. Kidney beans,  cottage Cheese,Olives, Mushroom, Bell peppers can go in to the filling. This time I have kept my filling simple.
In a bowl mix the grated potatoes along with corn cobs, coriander and garlic. Spice it up with chilli flakes, oregano, salt and pepper. The filling is ready.



Now place a phulka on a plate and liberally coat it with the sauce. Keep the filling inside . 




Now comes the fun part -- add grated cheese to it liberally and drizzle little olive oil on top of it. 

Close it with another phulka and press gently to close.



Put this in a non stick pan on a medium flame and let it cook till it is crispy and golden. Flip gently to get the same result on the other side.

Alternatively let it stay for a minute or two on the non stick pan and then pop it inside the preheated oven at 220 C for a few minutes till it is crispily baked.


Serve the Quesadillas quartered with Tomato Sauce or a dip of your choice.


I made this for my daughter when she came back from school after a tiring day---she just loved it .
