Paneer- Aalu Paranthas

Paneer or Cottage Cheese is my daughter's eternal favourite. I decided to rev up her lunch box by making delightful parathas with them. Eat Paneer Parathas with Pickle and curd. I promise that you will never feel sorry for the calories tucked in (:P)!!

Ingredients:- Paneer(cottage cheese), Boiled Potatoes (1 or 2),Onions(finely chopped), Green Chillis and Coriander leaves (finely chopped), salt, red chilli powder (optional), WHeat flour for dough and little oil

Procedure:- To prepare the stuffing, mix the finely chopped onions, green chillis and coriander leaves along with potatoes and the cottage cheese. Mash it well to avoid any lumps

Prepare the dough for parathas by mixing the wheat flour with required water and knead them well. Add little oil to make it in toa fine dough

Now take some dough and make it in to a small ball. Now flatten it little and create a hollow space to hold the stuffing. Place the stuffing as shown in the pic

Now close the dough with the stuffing and roll it out as shown

Put it on a shallow frying pan and cook it crispier n crunchier with a few drops of ghee/butter.

The stuffing can also be used in sandwiches or as cutlets in burgers.

The stuffing can be altered with ingredients to suit your taste. Few drops of lemon can be added or finely chopped mint leaves can go in to it.
