Coconut Rice


Coconut Rice is a very delightful and easy preparation. This dish also serves as a neivedhya/ offering in Navrathri and also in a couple of other celebrations. My refrigerator is piled up with coconuts after the ganesh chaturthi and i grabbed the opportunity to make the dish. Like i said earlier it does not take much time to put  together this dish except for the process of grating coconuts.


Ingrdients:-




  • Grated Coconuts ( Fresh coconuts make the dish a lot more peppier)
  • Basmati Rice
For Seasoning
  • Butter/Oil ( i prefer butter---- the taste just rocks)
  • Mustard Seeds
  • Urad Dal
  • Green Chillis
  • Ground Nuts
  • Cashewnuts
  • Curry Leaves
  • A pinch of asafoetida
  • Salt as per taste
Procedure:-

Cook the Rice and keep aside. In a wok, add some butter and as it starts melting put the mustard, urad dal and wait for it to splutter. Now add the curry leaves and the green chillis, asafoetida and stir it for a few seconds. Add groundnuts and cashewnuts and saute. 

Finally add the grated coconuts, salt and keep on stir frying till the rawness of the coconuts disappears and the whole mix assumes a lovely golden brown hue.  

Add the required amount of cooked rice and mix the entire contents well.

Coconut Rice is ready to be served. Have it with Papads and other crunchies. Enjoy !!!!
