Eggless Peanut Butter & Tea Masala Cookies - Snack on anytime !

I love peanut butter - probably the only thing in the kitchen besides Nutella that evokes unabashed emotions in me. I get drawn to the jar of the butter like a moth to a flame and what follows is quite a few sinful diggings. And direct from the jar; no taking out the spoon and eating it in a prim n propah way for me - no sir ! I told you that peanut butter lets loose an unapologetic side of me :D 



Besides stocking upon the store bought ones, I also make it at home and pep it up a whole lot of ways. Have a look at this 3 finger licking recipes of making peanut butter. I often wonder why my folks don't share the same enthusiasm when it comes to tucking in to this delight. If you count the occasional dabbing it on breads or tipping a spoon or two in to the smoothies , I would say that the peanut butter is almost shied away from. The only time I see my daughter n hubby light up hearing the mention of peanut butter is when I make cookies using it . 



My hearth often sports a breezy smell wafting out of these cookies as making it is a breezy affair. The recipe from an old magazine has been largely modified by me. For instance the cookies are sans egg while the original recipe had an egg. Cornflour (1 tbsp) and Water (2 tbsp) went on to substitute the egg factor. Besides, I used Tea masala instead of all spice powder as suggested by the original recipe .


 Besides peanut butter these cookies also has Tea masala, a pepper and ginger based spice blend. It adds to the freshness and warmth of the cookies and gives it a slightly edgy taste.



The cookie is especially rustic owing to the crunchy peanut butter - specks of peanuts dotted the cookies giving it a scrumptious taste. 


What's in it :- (Makes:25)
  • All Purpose flour - 3/4 cup
  • Whole Wheat Flour -1/4 cup
  • Corn Flour - 1 tbsp
  • Baking Soda - 1 tsp
  • Cinnamon Powder - 1 tsp
  • Salt - 1/4 tsp
  • Tea Masala - 1/3 tsp + a small pinch
  • Peanut Butter - 1/3 cup (I used crunchy honey roasted butter) store bought
  • Butter - 3 tbsp (softened)
  • Sugar - 1 cup
  • Honey - 1 tbsp
  • Water - 2 tbsp
  • Vanilla Essence - 1 tsp
For the Cinnamon- Sugar mixture :-
  • Icing/Powdered Sugar - 1/4 cup
  • Cinnamon Powder - 2 tsp


Useful Pointers :-

1.You can make the cookies with egg. Instead of cornflour and water simply add egg. Tip it after beating the sugar and butter.
2.Be sure to preheat the oven. Otherwise the cookies may turn out to be a damp squib
3.The cookies will be done by 7 to 8 minutes. Don't over bake  it lest they turn dry.
4.Place the rolled cookies apart as they spread while baking

Here's How :-

Preheat oven to 350 F/176 C. Grease a baking tin and set aside.

For the cinnamon sugar mixture combine the sugar and cinnamon powder and set aside.

In a bowl tip in the both the flours, corn flour, baking soda, salt and cinnamon along with tea masala. Stir the mix well and set aside. In another bowl tip in the peanut butter, softened butter along with sugar. Beat it for a minute or two. Add honey,water and vanilla essence and beat till smooth.

Using a wooden spatula, stir flour mixture in to the peanut butter mixture. The dough mix for the cookies will be ready in a jiffy. Pinch a small quantity of the dough and shape it in to a small ball. Roll the ball in the cinnamon sugar mixture. Follow the same for the rest of the dough.Place on the baking tin giving space for one another as they spread while baking. Flatten these cooking slightly using a fork.

Bake these cookies for 8 to 10 minutes. Remove cookies from oven and transfer it to a wire rack immediately.
