Life is beautiful especially after digging in to chocolate. A bite in to it and the heart surges with a zing and literally sings ! And gorging into a piece of brownie ~ a totally sensational affair altogether. Did I say one piece of brownie ? Make that 2, OK stretch it to three :D The brownie all dark and chocolate y with a generous fistful of choco chips is that irresistible ....

Brownies - the fudgy chewy,gooey delights hits all the right notes after being savoured down and I am crazy about them. In fact my love for these yummy delights has only one rightful competitor and that person is my daughter. She loves gorging on them and constantly finds reasons to make me bake one. She has a whole lot of favourites including the Nutella Brownies & Coffee Kissed/Red Chilli Spiced Brownies

Day after tomorrow is a class feast day mom and I have volunteered to bring Brownies. 42 pieces for my classmates and a few more for my teachers and principal
I regain my senses and blurted out - Don't you know about the 12-14 hour power cuts samyu ? Now why would you go committing to something like this ?

It's time to melt and crumble and don the apron. Gee, do I need a reason to bake a brownie ? And when there is not one but two genuine reasons at that :D

My search for a good eggless recipe landed me here. I hate running around for ingredients at the last minute and hence no scampering around to buy oreos or dark chocolates for me. The pantry boasted Pure Magic Biscuits from Britannia and a good chunk of Fruit & Nut Chocolates as well as some dark chocolate. I adapted the recipe to what my pantry had :)
Here's How :-
Preheat the oven to 180 C and keep the baking tin greased and dusted.
Melt the dark chocolate and butter with 2 tbsp of water over gentle heat. In case you use microwave, dunk it for 1 minute. Mix well so that no lumps remain.
Remove from the fire add the condensed milk and mix well. Cool to room temperature.Add the flour, crushed biscuits and vanilla essence and mix well.
Pour this mixture into a greased and dusted tin and sprinkle Chocolate Chips (liberally) on top. Bake for 20-25 mins. Cool on a wire rack. Slice & Serve.
Verdict :-
The kids and the teachers loved the brownies . And why not ? it tasted delightful and it is eggless to boot.
Chef Special Tips : Never feel guilty while downing these totally scrumptious treats. I did not :P The brownies tasted heavenly when digged into with icecream. Enjoy !
