POONDU LEGIYUM - A GUEST POST BY GAYATHRI - BLOGGER OF THE MONTH

There are a few blogs which leaves you amazed with the sheer passion behind the posts. The recipes and the pictures spells sincerity and utmost dedication.Gayathri's Cook Spot is one such space that never fails to wow me. Constantly striving to break the comfort zone, Gayathri, is an inspiration when it comes to the various challenges on the bake front.Non-availability of ingredients never deters her as she adorns the chef hat with ease ! Presenting Gayathri with a traditional recipe, in her own words :

Priya of Bon Appetit is a good friend of mine. When she asked me to do a guest post, I readily agreed. I couldn't select a recipe for the post. I wanted to make a traditional recipe for her. When I visited Coimbatore,  mom asked me to prepare this poondu legium for her. I took snaps of the legium to send it to Priya. This is part of postpartum diet. I got this recipe from a nurse. This is also a great medicine for those with gastric problems. One spoon a day is very effective. 


This tastes wonderful. Imagine Paalkhova with Poondu flavour. It is what the legiyum tastes like. The sweetener used for this legiyum is jaggery or palm sugar. If making this legiyum for postpartum diet, gingelly oil is used. Otherwise you can use ghee. 

Garlic is well known for its medicinal properties. This increases milk secretion for breast feeding moms.

I have been thinking of posting this recipe for long and at last I got a chance to post it. Thanks Priya for the wonderful opportunity. 
Ingredients:
  • Garlic-250 gm
  • Milk-1 Lt
  • Jaggery(grated) -1cup
  • Water - 4 tbsp
  • Ghee/ Gingelly Oil -3tbsp
Procedure:

Peel skin of garlic and wash it.Bring milk to boil and add garlic. Simmer until garlic is completely cooked.With the back of a ladle, mash the garlic well.Boil milk until it is reduced to a semi solid form.
In a sauce pan add jaggery with 4tbs water. Bring the mixture to boil.When the jaggery is completely melted and it starts boiling, remove from stove and strain the syrup to get rid of impurities.Add the syrup to garlic milk mixture.Let it boil until the mixture becomes very thick.
Add ghee or oil, mix it well and remove from stove.Once cool, transfer to a jar and refrigerate. Consume one teaspoon daily as a medicine.
