Wheat Almond & Palm Sugar Cookies

It's been a while I baked anything substantial- breads, cakes, cookies et al were happily devoured form the fresh offerings of a newly opened bakery shop near my home and there was no reason to really flex my muscle (hee hee). I had to turn my attention to our OTG when my son was happily making the oven his play station --to store his cars & bikes and to top that the knobs of the gadget got the royal treatment of being simulated to resemble racing in a car.That was it, I had to respond to my OTG's request to change the place as well as to give it some action. These almond sugar cookies that got my attention for its simplicity had a lovely transformation in the oven and it changed from a flour mix to beautiful melt in the mouth cookies.




A few twists to the original recipe in the form of replacing sugar with palm sugar as well as adding a pinch of salt to the dough was done and voila my hearth was buzzing with delicious almond aroma !!!!

What's in it :- (Made a dozen small sized cookies and a few medium sized ones)
  • Wheat flour (sifted) - 150 grams
  • Palm Sugar  (powdered) - 100 grams
  • Almonds- a fistful - toasted & powdered
  • Ghee/Clarified Butter - 3 to 4 tbsp @room temperature - as required to bind the dough
  • Salt - a pinch
For the Toppings (optional)
  • Food Colour 
  • Pistachios
How :-


Mix wheat flour, powdered almond and palm sugar along with the salt. Add ghee spoon by spoon and form a soft dough.Now make small sized balls and place them on baking tray, giving a little press with a fork. Alternatively use a cookie cutter to make shapes of your choice. Top it with food colour or pistachios and its ready to buzz in the preheated  oven.
Bake @ 150°C for 12 to 15 minutes or till it is done. Leave it to cool at room temperature.

  7. Hi Priya, the cookies look delicious and aromatic yet simple to make. I love the addition of palm sugar here. Last saturday, a friend of mine brought kozha puttu with palm sugar-coconut fillings in between. It was utterly delicious. I don't have puttu kudam. But, I can definitely make these adorable cookies. Let me buy some palm sugar from Indian stores. Thanks :)
