On a recent outing to my favourite diner, we savoured this very tasty Papad Parathas and I had been waiting to try it out at home !
The crunch of the parathas was a winner all the way !
Papad/Papadam is a crispy thin flat bread type snack served as an accompaniment to the main course or as an appetizer or even as an after meal mouth freshener (yup!!) .They are rolled out as thin disc like shapes from a dough made of lentils/pulses. The dried discs are then deep fried or roasted over gas top or an oven ! We get ready made packets of a wide variety of papads that vary in terms of spice mix.
The papads I used for parathas is the mini masala papads that had a fine blend of spices to pep it up !!
You can just crumble the fried/dry roasted papads and directly use it as a filling in the dough; or alternatively make a curry out of them with onions and a few other fuse of ingredients and use them as filling. The parathas from my hearth had both the options tried out & relished !!

What goes:-
For the dough:--
- Wheat Flour - 1 cup
- Water - as required
- Oil - little
For the Papad mix:--
- Fried/Roasted papads - 15 to 20 (i used mini papads, take quantity as required)
- Spice Blend- chat powder /coriander/cumin powder - optional - to taste
For the Curry :--
- Fried/Dry roasted Papads - 10 to 15 (adjust the quantity as required) - crumbled
- Shallots - a fistful - finely chopped
- Green Chillis -2 - to taste - finely chopped
- Curry leaves - a few - roughly chopped
- Cumin Seeds - 1tsp
- Garlic- 4 to 5 pods- chopped
- Pepper Powder - a few sprinkles - to taste
- Red Chilli Powder - to taste - optional
- Salt - not required - to taste (papads usually have salt)
- Coriander Leaves - afew sprigs - finely chopped
- Olive Oil - 1 tsp
How:-
Mix the flour & water as required for the flat bread - add a little oil and knead well for a fine dough !! Set aside.
Get the papads ready - deep fry them or roast them & crumble it !!
If using papad mix with spice blend, crumble the papads & add the required spices; it is ready to go as filling for the parathas.
For the curry, take a wok and warm up the oil. Let the cumin seeds sizzle and stir fry the green chillis along with curry leaves & chopped garlic. Now add the onions and saute well till it turns a fine pink. Season it with salt & pepper and add red chilli powder if required. Finally add the crumbled papads and give it a quick toss. Garnish with chopped coriander !
The mix is ready to go as filling.
For the parathas, take a small quantity of the dough and put a heaped spoon of the filling ( either papad mix or the curried papad ) and seal the ball ; roll it out in to thin flat breads.

In a non stick pan, add a few drops of olive oil and let the parathas cook well on both sides to your sense of crispy crunchy bite !!
Enjoy it with pickles, raita or ketch-up !!
