Elbow Macaronis in Creamy Oats & Almond Sauce

A hearty breakfast/brunch for me is the very filling Oats Porridge (kanjee). My daughter doesn't fancy oats as kanjee much and with great difficulty was spooning down her portion. Watching her sulk n eat gave me an idea.
I asked her to watch television promising a dish that she would very much enjoy!
What followed next was making a sauce for the pasta with the Oats Kanjee & Almonds in fresh cream. The final step was to dunk the cooked elbow pasta in the sauce and dress it up with some more powdered almonds. Since I was in a hurry to give her the breakfast , the dish lacks some fresh herbs, but feel free to add chopped celery or parsley to bring more taste to the palate




My daughter simply loveddddddddddd it, she never could guess that her favorite pasta dish had the Oats porridge which she had trouble eating! She has asked me to make something similar in future too, so that gives me a few ideas to include oats in more merrier ways - Watch out this space!




What's in it:-


For the Sauce:-
  • Oats Porridge (Kanjee) - 1 cup 
  • Onion- 1 (large) - sliced
  • Garlic - 2 to 3 pods - chopped
  • Almonds - a few - roasted n pulsed roughly
  • Cream - 2 to 3 tsp (I used Amul fresh Cream)
  • Grated Cheese - 1/2 cup - to taste
  • Butter /Olive Oil - 1 tbsp
  • Salt N Pepper - To Season
For the Pasta :-
  • Elbow Shaped Pasta - 1 big cup -cooked as per directions (can also use shell shaped,farfalle,fusilli)
For the Final Garnish:-
  • Powdered Almonds
  • Tabasco sauce - a few drizzles - to pep it up - optional
  • Oregano 

How:-

Make the porridge with enough water & milk to a porridge consistency.Cook the Pasta as per directions and set aside. Also if not using immediately add a few drops of oil and toss it. This helps the pasta to remain sticky free and fresh ! Be sure to retain the water in which pasta was cooked. This adds to the taste also if the dish becomes too dry this helps in bringing the right texture.
Dry roast the almonds and pulse them roughly. Set aside.


In a pan add butter and saute the chopped garlic pods and onions for a few minutes. Add the roughly pulsed almonds and give it a good stir. Now add the Oats porridge and as it comes to a boil add the fresh cream and the grated cheese. Mix well & season it with salt and pepper and let it simmer for a few minutes. 


Remove from fire and toss the pasta just before serving and mix well. Add the starchy water if the dish is too dry and garnish with powdered almonds, oregano and a few drizzles of Tabasco Sauce.
Serve hot !
