Cinnamon laced Sweet Bread

These day I am baking like there is no tomorrow and a good part of it are not turning out the way they are supposed to (sigh- the sad truth) ! My bake two days back was tad under-cooked and did not have the taste the blogger (whose recipe i had tried) ga-ga'ed about and there are other disasters which i rather not elaborate now- may be some other time will pour out my sob stories ! A bad bake dampens the day, though the good news (not for my hubby dearest, who is the guinea pig) is I am back to my baking ways very soon !!
I saw these beautiful cinnamon swirl bread here and was back on the baking prowl ; the recipe was followed to a great extent except that instead of the swirls  the dough was made in to a normal loaf ! 




It tasted swell, though a little crumbly. 


Update:- Swathi @ Zetsy South Indian Kitchen gave a suggestion to reduce the crumbliness - increase the water content and reduce the flour.  She says the dough needs to be sticky initially and after working on it for 10-15 minutes it becomes soft. 
 Also the yeast to work its magic needs to be immersed in warm milk/water with little sugar instead of butter.This suggestion will be incorporated in my future bakes.


Cinnamon is such a versatile flavour and the bread was heavenly in sandwiches with my Tomato-Onion Relish as the perfect sandwich spread !




What goes:-
  • All purpose Flour - 350 grams (approx) 
  • Butter - 75 grams - room temperature
  • Milk -240 ml
  • Salt - 1 tsp
  • Active Dry Yeast - 8 grams
  • Egg - 1
  • Sugar - 65 grams
For the sugar-cinnamon spread:-
  • Powdered Sugar n Cinnamon - 4 to 5 tbsp- as required
  • Butter - as required
Egg wash:- 1 egg & milk

How:-


Heat the milk in  a low-medium flame and melt the butter in it without boiling. Wait till it becomes luke warm, add the yeast and let it sit for 10 minutes. In the meanwhile mix eggs and sugar in a bowl and add it to the milk-butter-yeast mix. Combine the flour & salt in to the mix and knead it in to a dough adding more flour if the dough is too sticky.


Place the dough in a well greased bowl and cover it with a food wrap. Let it rise and double in size.



Knock back the dough and place it on a lightly floured surface and roll it out like shown. Spread the butter and sprinkle the sugar-cinnamon powder.




Then knead it once again  gently and place in the greased loaf tin. Cover it and allow it to rise again.Mix the egg& miljk and brush it on the loaf.
In a preheated oven bake @ 175 C for 40 minutes.



The lovely cinnamon buzz  was everywhere. Slather it with butter or make a sandwich with choice sandwich spread,top it up with onions & chillis and cheese slice (blame the bread for forgetting the calories) and just enjoy the rush of flavours !

  20. Bread looks delicious. I have a suggestion if you don't mind. If you increase the water content, and reduce the flour, it may not be crumbly. Dough should be very sticky in the beginning then after kneading for about 10-15 minutes it become soft. One more thing, don't add yeast in butter, yeast needs to added in water or milk with little bit sugar to wake up.
