So here goes my recipe:-
What goes----
For the Indian Flat Bread---
- Wheat Flour - 1 cup
- water- as required
- Oil- little
For the Filling:-
- Cottage Cheese (Paneer)- 100gms
- Carrot - 1 large
- Cheese - 50 gms
- Coriander leaves - a few sprigs
- Mint leaves- little
- Green Chillis - 2
- Pepper Powder - to taste
- Salt - to taste
- Black Salt - a pinch or two
Method---
For the filling in a bowl grate the paneer, carrot n cheese. Add the finely chopped coriander n mint leaves and season it with salt, pepper, green chillis and the black salt. The black salt adds its own flavour to the filling. Also instead of paneer you can use grated tofu.
Knead the flour with enough water and little oil to make in to a fine dough. Set aside
Now take a small quantity of the dough and make a small pouch to place the filling as shown
Spread it flatly using wheat flour to dust it if sticky.
Put this spread on the shallow frying pan/ tava and cook it crispier with a few drops of ghee/butter.
Enjoy the steamy, crunchy, crispy parathas with accompaniments of your choice.
