Alu Parathas

My daughter craved for Alu Parathas, and my kitchen was buzzing with crispy golden Parathas for breakfast.

Not only is this delightful recipe very simple to make also it packs in quite a punch with minimum accompaniments like curd or Sauce.

Ingredients required:- ( For the Stuffing)

  • Boiled Potatoes
  • Onions
  • Green Chillis
  • Coriander Leaves
  • Salt as per taste
  • A pinch of turmeric Powder
  • Red Chilli Powder ( optional---- as per your taste buds)
(For the Parathas/Flat Bread)
  • Wheat Flour
  • Refined Flour
  • Water
  • Little Oil
Method:-

Mash the boiled potatoes and mix finely chopped onions, green chillis, coriander leaves along with salt, red chilli powder and a pinch of turmeric powder. I also add cumin seeds along with some curry leaves sometimes. You can bring some varied culinary delights to the dish by adding your own choice of spices, but today i just kept it simple.

Prepare the dough for parathas by mixing the wheat flour and the refined flour with required water and knead them well. Add little oil to make it in to a fine dough. I used some refined flour for preparing the dough. This gave the dough a lot of elasticity and the taste was a knockout

Now take a small quantity of the dough and spread it flatly using wheat flour to dust it if sticky. Place some stuffing on it and spread the dough like shown in the pic.

Put this spread on the shallow frying pan/ tava and cook it crispier with a few drops of ghee/butter.

Enjoy the steamy, crunchy, crispy parathas with accompaniments of your choice.
