Dal Puri


Luchi is typical Bengali fare. It is basically Puris ( deep fried flat bread) made with a dough of Refined Flour , Salt and Ghee/Oil. Stuffing the dal in the  maida dough and then frying them as  puris is Dal Puri.
They taste yum and the lengthy preparation is worth every bite....


Now a look at the ingredients:-


For the dough-----

  • Refined Flour/Maida
  • Salt (as per taste)
  • Oil/Ghee  (2-3 tsp)
  • Some Oil in Wok for frying
For the Stuffing----
  • Bengal Gram (Kadala paruppu)
  • Green Chillis
  • Mustard, Urad Dal,oil ( for Seasoning)
  • Coriander leaves
Getting Started------------

Knead the flour with salt, oil and required water to make a fine dough. Set it aside.












Soak the Bengal Gram for some time.
Now pressure cook the bengal gram and drain the excess water. Grind the dal along with green chills, salt and some coriander leaves to a fine paste. Add little water if the mix is getting very dry and unable to grind. It is ok if the paste is semi solid. Now In a wok add some mustard and urad dal in little oil and wait for it to splutter. Add the paste and keep on stirring till the mix becomes dry enough for filling.




Flatten a small ball of the dough with the rolling pin, and place little filling on it. Close the sides and make it in to a pouch/ball again. Now flatten this pouch again dusting it with little flour to avoid stickiness



In a wok, heat some oil and deep fry the flat bread to golden brown. 
Dal Puri is Ready to be served with any Gravy. 

Yesterday's lunch of  Dal Puri with Chole Gravy turned out to be a very delicious affair and i plan to make this dish again with wheat flour.
