Whoop for "Oatmeal Nutella Whoopie Pies"

Feeling gloomy ? Don your aprons and bake. You would all so agree when I say the whole process is therapeutic ! Right from rummaging the pantry for ingredients to whipping, mixing and setting ; the clockwork like precision is just right for your mind to shed its distress. Within few minutes the niggling issue becomes a thing of the past and what prevails is the excitement to see a fine bake. It works for me ; every time  !
These whoopie beauties packed with yum was baked  on a day when the heart and soul had issues and peace was nowhere in sight.... 

I'm pretty sure the secret to world peace is hidden somewhere in the smell of coffee and baked sweets. - (Unknown)

Sandwiched Oat Cookies with Nutella Frosting. What's not to fall in love about it ?. The Oat y cookies were on its own very tasty. Crunchy crumbly, nimbly, they are that good. When sandwiched with nutella frosting the happiness quotient zooms to a different high. 
They are perfect for the christmassy festive spirit in the air. Don't hog all of them on your own, share then with your friends, neighbours et al and see the instant  connect. Yeah, they are that delightful  and very addictive:) 

MY pantry had some Demerara coffee sugar and quick cooking oats; I immediately knew what I wanted to bake. Sometime back I had bookmarked a gorgeous looking whoopie pie recipe from Deeba who in turn was inspired from The Pioneer Woman. And very soon the hearth was buzzing with rustic aroma wafting from the cookies. What makes them interesting is that it looks cake y yet it is a cookie and in essence a cookie sandwich.
The cookies i baked are a good size ala the Lotto Pies you get in the market. I used an ice cream scooper to drop the dough in to the baking sheets. You can use a cookie scooper or a teaspoon for more dainty looking cookies :)

What's in it :- (I got 12 cookies/6 whoopie pies)
(Prep Time :25 mins ; Bake Time: 20 Mins)

Here's How :-

Preheat oven to 180 C/350 F. Line the baking trays with parchment sheets.

First roughly blitz the quick cooking oats and set aside.Cream the butter and the sugar well. Tip in the cracked egg, salt, cinnamon powder and the baking powder. mix well. In a separate bowl mix the boiling water and baking soda and dissolve. Dunk this in to the buttery creamy mix. Finally add the flour and the oatmeal. Mix well.

Use an ice cream scooper/cookie scooper/teaspoon to scoop and drop the dough to the parchment paper giving enough space between each other.

Bake for 20 minutes. Take care not to burn them off. Remove them from oven and let it cool completely.

In the meanwhile, take a small saucepan and whisk the milk with flour. Let it heat and thicken on a low flame while continuously stirring it so that it does not turn lumpy. Remove from flame and let it come to room temperature. Stir in the vanilla essence.

Whip the flour mixture till well combined and tip in the nutella. whip till well combines. Whisk the low fat cream to medium peaks and fold in the flour-nutella mix.
Refrigerate the nutella frosting for 30 minutes before draping it over the cookies to be sandwiched as pies.
