Chilled Nutty Choco Bites - A VIRTUAL SURPRISE BIRTHDAY BASH FOR RADHIKA

The joyful delight of celebrating the birthday of family or a friend is infectious. I so look forward to making it extra special  and add my own touch to the festive fervor. This in-spite of the fact that I am wary of my own birthdays; not because I turn a year older but because with it comes the responsibility of becoming wiser :D 
However, birthdays are the perfect occassion to reflect, initiate and indulge. Reflect on the year gone by promising to self a fresh tide of new beginnings, initiate some change if possible and binge like there is no tomorrow :)

Radhika, the vivacious lady behind Tickling Palates, is a dear albeit virtual friend. She celebrates her birthday today and we the blogger buddies united by Kavitha plan to surprise her with a virtual bashparty

What's a bash without a dessert to celebrate the good times. Besieged with a lot of commitments, I decided to go for this simple no bake bites. 


Let its simplicity and the rustic looks not fool you as every single bite is a sizzling treat to the taste buds. 


The best part was my son sang babbled  Happy Birthday on seeing the candle.


A little tweak to the recipe was essential and the nutty, crunchy and textured bite of the cake is a delight to dig in. I have chopped the nuts roughly and it gives a earthy and rustic edge to the cake. You can blitz the nuts in a blender for a smoother texture.


What's in it :- (Preparation Time : 30 minutes ; Setting Time : (min) 2 hrs
  • Butter (unsalted) - 175 grams
  • Chocolate (Good Quality) - 150 grams (cut into pieces) - Cadbury Fruit & Nut
  • Digestive biscuits/Graham crackers - 250 grams (I used Britannia's Nutrichoice)
  • Nuts - 200 grams (a mix of raisins,almonds,pistachios), roughly chopped
Here's How :-

Tip in the butter and chocolate in a small pan and heat gently until the butter and chocolate have melted. Set aside to cool. 

Crush the biscuits to make fine crumbs. You can do this by tipping them in to  a Ziploc bag and then reducing them to smithereens with a rolling pin.

In a bowl , dunk the biscuit crumbs, the melted butter-chocolate mix and the remaining ingredients. Mix thoroughly. Spread the mixture into a well greased baking tin.  Press down with the spatula.

When the mixture is completely cool, cover with cling film and refrigerate for a minimum of two hours.When it has set firm, cut it into squares, which should then be returned to the fridge. Alternatively you can crumble and serve with a chocolate sauce.
