Stir Fried Rice with Eggs n Baby corn

I don't feel like cooking- bug bit me hard yesterday! Incessant rains and frequent power cut played  spoilsport, which meant no going out. I decided to take it easy and make only lemon rice for lunch. But my daughter wouldn't have anything to do with lemon rice. So the boiled rice saw a  flavourful twist with eggs baby corn n some whole spices. A little soy sauce further enhanced the taste.




So here's my recipe:-


What goes-----

  • Boiled Rice - 2 large cups
  • Eggs (boiled) -2
  • Baby Corn - 4
  • Capsicum- 1
  • Onion -1 (large)
  • Green Chilli - 1
  • Soy Sauce - few drizzles
  • Fennel Seeds - 1tbsp
  • Mace (crushed ) - a little
  • Bay Leaf - 1
  • Cardamom (crushed) - 3 pods
  • Garlic - 6 cloves
  • Salt - to tatse
  • Butter - 1 tsp
How did i put together----

Cut the onion, baby corn and capsicum in to thin slices. Let the boiled eggs also be cut in to thin strips.

In a kadai ( wok) , add butter and as the fennel seeds splutter, add the bay leaves, mace & cardamom. Stir it for a few seconds. Now add the finely chopped garlic and as you saute let the wonderful aroma envelope the house. Add the onion and green chilli and let it stir till it becomes translucent. Add the cut capsicum, baby corn and cook till they become tender. 

Adjust the salt to taste and add the strips of boiled eggs.
Stir it for a few seconds. Drizzle in some soy sauce while adding the boiled rice and mix well. 

Take off flame and serve hot with papads / crunchies.
