Vegetable Stock

For one of my gravies, I set about making a basic vegetable stock. This stock can be refrigerated for a few days and can be used in Gravies/ Rice dishes to enhance the flavour and taste.

  • Onion ( 1 medium sized)
  • Carrots (2-3)
  • Coriander leaves (3-4 stalks)
  • Black Peppercorn ( a big tsp)
  • Leeks - leaves n tubers ( 3-4 stalks)
  • Celery ( 2-3 stalks)
  • Garlic (2-3 pods)


Roughly chop the onions and carrots. Now in a big pan add all the ingredients, pour 6 cups of water and bring to a boil. Then close the lid and let it simmer for 30 minutes.

Once it is cool, strain and the stock is ready to use.

This stock can also be stored for use.
