Baked Kulchas

I fancied eating Kulchas for dinner. Kulchas are a type of Indian bread made from Refined Flour/Maida.


One other thing that makes these Kulchas awesome, is the variety of ingredients that can be used as filling. For this we can use mashed potatoes, finely chopped onions and a variety of spices depending on our taste.  Other than the usual potatoes and onions, I added a handful of Pomegranates, Grated cheese, a few cashews and raisins and the taste was mind boggling !!!


The different ingredients are mixed together and placed in the dough and rolled in to a flat shape. They are then baked in Earthen Oven (Tandoor)/furnace until crispy and golden Brown.  


Baking it in the OTG was just as yummy and the meal was a very delicious affair ! 




Serve them with any spicy side dish or simply have them with Tomato Sauce, Pickle and Curd, the kulchas are a winner all the way!


Ingredients:-


For the Dough
  • Refined Flour/Maida (3 cups)
  • Baking Powder (1/4 tsp)
  • Salt (as per taste)
  • Yoghurt (1/2 cup)
  • Oil  ( 2-3 tsp)
  • Sugar (1 tsp)
For the filling
  •  Boiled Potatoes (2-3)
  • Onion ( 1 medium size)
  • Green chillis (2-3)
  • Cumin seeds (1 tsp)
  • Grated Cheese ( 1 cup)
  • Pomegranates (a handful)
  • Red Chilli Powder (optional, to taste)
  • Coriander leaves ( 1 cup)
  • Mint leaves (8-10)
  • Salt (a little)
  • Cashew nuts broken (10-15)
  • Raisins (10-15)
For Garnish:-
  • Onion Seeds ( Kalonji)
Method:-


Mix all the ingredients for the dough and knead well. Use water if required and make it in to a smooth and soft dough. Cover it and let the dough sit for at least an hour.




For the filling, mash the boiled potatoes and mix them along with finely chopped onion, coriander leaves, mint leaves, red chilli powder, salt , cumin seeds, pomegranates, roughly chopped cashews and few raisins. Finally mix them well with Grated Cheese.



Note:- You can add or avoid ingredients for the filling as per your taste. For instance instead of cheese, grated cottage cheese or even tofu can be used. Fennel Seeds, Carom seeds can also be added to the filling. Every spice adds its own taste and flavor. Let your taste buds dictate the imagination for the filling.

For the Kulchas:-

Preheat the Oven in Bake Mode for 10 minutes at 220 C

Now take a small quantity of the dough  make a small pouch and place  small amount of filling.Now cover the filled dough to make a ball and roll it gently to a flat shape.

Sprinkle few Onion seeds ( kalonji) and press it lightly. 


In a greased tray place the flattened dough and spread some butter on it.


Bake it the Oven for 8-10 minutes and serve them Hot.
