Chole Bhature

Chole Bhature a very famous North Indian Dish is quite easy to make. Chole with Bhature ( a type of poori made with refined flour and semolina) is the yummiest of combinations.

First a look at how to make Bhature:-

Ingredients:-:- Refined Flour/Maida, Semolina/Rava, curd ( 1 cup), mashed potatoes (2), a little oil.

For the dough, mix the refined flour and semolina in the proportion of 3:1 ( after various trials,this gave me the right crispiness without going hard ), along with a cup of curd, mashed potatoes and a pinch of salt( optional). Now knead the mix to make a dough adding water if required !!! Finally add some oil and make the dough a very fine one.
Like i elaborated in poori blog ------Now make small balls of this dough and spread across the board to thin bhature.
In a wok heat sufficient quantity of oil and deep fry the bhature to a golden brown.

BHATURA is Ready !!!!

Now for the Chole

Ingredients:- Chole/Kabuli Chana, Onions, Tomatoes,Ginger- Garlic Paste, Chole Masala/Garam Masala, Turmeric Powder( a pinch), Red Chili Powder (optional), Salt as per taste, Coriander leaves,Green Chillis

Soak the chole overnight and pressure cook it.

Grind onions to a paste and puree tomatoes likewise. In a wok add some butter and stir the onion paste for some time. Add Ginger- garlic paste and keep on stirring the mix. Now add the pureed tomatoes along with chole masala/ garam masala
and let it simmer for some time.

Now add salt and the boiled chole to it. Add finely chopped coriander leaves and a dollop of butter !!!!

Mouth watering chole dish is ready
